Evaluation of the Occurrence of Polycyclic Aromatic Hydrocarbons in Smoked Foodstuffs Using Gas Chromatography-Mass Spectrometry

Polycyclic aromatic hydrocarbons (PAHs) are food contaminants that accumulate in various foodstuffs, most often during certain processing steps, such as smoking or grilling. Many PAHs are carcinogenic, therefore their levels in foods must be closely monitored and carefully controlled, such that they are maintained below EU regulated threshold values. The project herein describes the development and application of a GC-MS method for evaluating PAH levels in foods, with focus on smoked foods.

New modified electrodes for gluten detection from aliments

The project proposes the obtaining of modified electrodes with nanostructures and graphene oxide film, for detection of gluten in foods, including thermally processed foods. The project is intended to be a continuation of a research started during PhD studies, regarding nanostructures of titanium dioxide synthesis and characterization. In the proposed research, new modified electrodes will be obtained, to allowing a lower detection limit.
